Turkey Denver Omelette Egg Casserole

So, people have asked for this recipe, and I am going to post it, and instructions on how to make this super easy and delicious egg bake for weekend breakfast, or any time. It is a traditional egg casserole, with some added extra ingredients to make it like a Denver omelette.

Ingredients:

6 Large eggs

4 Slices bread (dried or not)

6 slices Turkey Bacon

1/2 Green Pepper

1/2 Red Pepper

1/2 Onion (white or yellow, your preference)

1/4 tsp Baking Powder

1/2 tsp Kosher Salt

1/2 tsp Black Pepper

8 oz Shredded Cheddar

2 tbps Milk (2%)

Equipment:

Oven (Preheated to 350 F)

8×8 glass baking dish

Large bowl for egg mixing

Step 1:

Crack 6 eggs into a mixing bowl, add baking powder, milk, salt and pepper and whisk thoroughly.  Set aside on counter while prepping the bacon and cutting the vegetables.

Step 2:

Cut up the Peppers, Onion into small strips (larger than diced, but small enough to mix well in the eggs)  Tip: Use a whole onion and whole peppers and after cutting store half in a freezer bag for making another egg bake at a later date (you will want to), but if you are using frozen veggies, be sure to let them thaw and pat dry to remove excess moisture.

Step 3:

Cook the bacon in the pan on medium high heat until chewy.  Use a kitchen scissors to cut the turkey bacon into small strips, I don’t know why, but scissors just work better for cutting up turkey bacon.

Step 4:

Spray 8×8 inch baking dish with cooking spray, and tear bread into small chunks.  If you think of it, set out the bread to dry the night before, as the dry bread will soak up the eggs better, but bread fresh out da bag works just fine.

Step 5:

Combine peppers/onions, turkey bacon, half of the cheese with the whisked eggs, and stir to mix well.  This goop you see before you will be delicious in a half hour.. I promise!

Step 6:

Pour the egg-veggies-bacon mixture over the bread in the 8×8″ baking dish, and ensure that the mixture is well mixed and the bread is properly coated.

Step 7:

Sprinkle the remaining cheese on the top of the egg bake, because every casserole must be covered in cheese, or it doesn’t count as a casserole. Cover the dish with aluminum foil, place in the oven for 20 minutes.

Step 8:

After 20 minutes, remove the bake from the oven, and take the foil off, return to the oven for an additional 10 minutes, uncovered.  This will allow the top of the bake to brown, and the cheese to turn into that beautiful golden brown shade that haunts your mind.  Isn’t cheese awesome?

Step 9:

Remove from the oven, cut and serve. Top with a spritz of Sriracha… if you are awesome.  Or a glop of ketchup.. if you are a cool guy.

This is one of my favorite weekend dishes, because it involves some of my favorite things.  Eggs, bacon, cheese, and easy preparation.  You can also basically substitute the ingredients I put in the casserole with any of your favorite omelette options.  Sausage, ham, mushrooms, or even real bacon (If you have the cajones)
